But, gettin' this train back on track, what I wanted to share with you has nothing to do with tits (damn, said it again). I wanted to tell you about this simply scrumptious delight I prepared on New Year's eve to be reheated for brunch the next day. It is sort of southern and sort of Italian and I call it:
Sausage and Collard Greens Free Tata

8 ounces collard greens -- frozen
3/4 cup whole milk
1/2 cup heavy cream
1 teaspoon Dijon mustard
salt and pepper -- to taste
8 ounces French bread loaf -- cut in 1" cubes
3/4 pound Italian sausage -- bulk
1 tablespoon butter
1/2 cup sweet onions -- chopped
1/4 cup celery -- chopped
1/4 cup Parmesan cheese -- shredded
Preheat the oven to 350 degrees.
In a large bowl, whisk the milk, cream, mustard, and eggs until thoroughly mixed. A vigorous whisk will produce a frothy mixture which will create a lighter free tata.
Season the mixture generously with salt and pepper.
Add the bread cubes to the egg mixture and toss to combine, making sure every piece is saturated. Set aside.
Meanwhile, in a large saute pan, cook the sausage over medium-high heat until cooked through. Remove the sausage from the pan and reserve 2 tablespoons of the pan drippings. Heat the reserved drippings and butter; add the onions and celery and saute until soft and translucent, about 5 minutes.
Add the greens to the pan and cover. Cook for 2 minutes to thaw, remove the lid, and season generously with salt and pepper. Continue to cook uncovered, stirring occasionally, for an additional 5 minutes. Remove from the heat and cool for a few minutes.
Grease a 9 x 9 casserole dish.
Toss the greens and sausage with the bread mixture until well combined. Pour the mixture into the dish. Allow to sit for 45 minutes or so.
Cover with aluminum foil and bake for 20 minutes. Remove foil, sprinkle with cheese and cook for an additional 25 minutes, or until the top is crisp and golden brown.
This dish is best served with a ice cold bottle of Prosecco.
